Man, I made...excuse me, I don't mean to boast...but I made the best damn pork chops I've ever made tonight. And maybe, dare I say it? The best I've ever et. I wish I knew how the hell I did it. Thick chops, bone in, is part of it. Good meat. Brining is the second part. Spice rub and a good sauce I got from
Cook's Illustrated. Still. The magic pork fairy must've dusted these beauties, 'cause they were awesome.
Made a deep pan corn bread to go with. Heated the pan with bacon grease in the oven first, then poured the hot grease into the batter, leaving a bit in the super-hot pan, so when I poured the batter in it started cooking immediately. Nice.
I love cooking. And we have so many new kitchen toys! I love it! Ask Erin. Sometimes I just take the knives out of the block and look at them.
